A Cow, A Quiche and a Foggy Rainbow

I'm a little late with my Sunday post today...so much has been going on. Have you ever seen a rainbow in the fog? I haven't! I wonder if there's a pot of gold beyond those trees? 😊 


Alex and I went for a walk last night. The sky was so beautiful, the Waxing Crescent Moon was bright in the sky!


There were very few clouds in the sky, but they reflected the sunset beautifully.


We sat by the river for a while. I thought the reflection of the clouds in the water was pretty. We heard coyotes too.

Raccoon tracks?


This was such a delicious meal...Cauliflower and Jarlsberg Quiche. Quiches are simple to make. As long as you have a good crust recipe, all you need to do is layer your veggies, a mix of milk and eggs then load it up with the cheese of your choice!


If you have fresh basil to use up, try making my Sundried Tomato and Basil Pesto. It's really good on crackers with a little Cheddar shredded on top!

I found a tomato farm last week and I scored a great price on 120 pounds of Roma tomatoes that I'll be canning for the winter. I have to call the owner of the farm tomorrow to see if they're ready. Fingers crossed this drought hasn't affected them too badly!

  5. I was wondering if you had thought about the raw milk situation for making your cheese. Since I saw the picture of the cow here I was just thinking maybe you could talk to the owner about letting you have raw milk in exchange for cheese. I mean like who's going to send the police around in the boonies to get you?

  15. Thanks for taking us along on the walk, Rain, and I enjoyed the photos. we are looking forward to getting back not longer walks once the cooler weather comes and stays. Fall is my favorite walking season! Thanks for the recipe on using fresh basil and sun-dried tomatoes and when I have extra basil (maybe next year) will try that. I made pesto with basil friends gave us and then froze it in small balls for use during the year. We enjoy quiche and like cauliflower, but I have not tried to combine them and NOW I will be doing that and maybe including some broccoli as well. Hope you get those tomatoes and happy canning!

  21. Wow what a beautiful night and that cloud reflection is gorgeous. Yep, those tracks are raccoon. I was a tracker in my younger day. I am surprised the toe nails didn't show better in that dirt. The quiche looks amazing. You are so lucky Alex likes all kind of different foods. I have never seen a rainbow in fog. Wow!. Now the cow!   28. You're right Leanna :)) I'm sure the police have more important things to do! Actually, approaching the farmers is on my list of things to do. Dave, the guy who helped out with the well pump, he knows all of the farmers around here, and he said to just call him up and he'd try to find some raw milk for me. I have to be ready to make cheese the very same day though, and I'm so scatterbrained lately. But I think I may be able to score some raw milk for sure!

I am trying to build a huge pantry...I only started canning a few years ago with a water bath canner. I bought a pressure canner last year. I'm very much into "putting up" and I hope I can do lots more! :)

  38. Thanks Dorothy :)) I hope I get those tomatoes too. That is a huge staple for us. The cauliflower quiches are so good with Cheddar, or any kind of Swiss. Adding broccoli is a great idea. Fall is a great walking season I agree!! :)

  44. Thanks Nicole :) I envy that you were a tracker. I'm trying to be more observant when I'm on my walks, it's hard with the dogs sometimes...but I notice little tracks here and there. I think winter will show me a lot more. I've never seen a rainbow in fog either, it was really cool.

  49. Seems I'm even later visiting. I love the photos of the fog and rainbow. It's hard to capture fog and you did it perfectly. That rainbow is so unusual I suspect because of the fog.

    Nice cow, LOVE Jack's photo, and enjoyed reading the recipe for sun dried tomato pesto.

    I've made quiche a couple of times and I hate how my crust turns out. Again, sorry I'm late visiting. I'll see you for sure on Thursday.

  53. I've never seen a rainbow 🌈 with fog. It must take very special circumstances for that to happen. I'll be looking out for it now though. Pastry making is quite a skill so I will admit to us always buying ready made for the fridge or even the freezer.

  62. It's been a long time since I have eaten quiche. I like it packed with cheese. You have an ambitious plan with those tomatoes. Reminds me of my grandmother who had a pantry full of mason jars with tomatoes, peppers, beans, eggplant, onions and combinations thereof, not to mention the jams, jellies and fruit preserves. Enough to take us well into the next summer!

I dream of a pantry like the one you described! I'm starting with tomatoes and hopefully over the next few years I can add to that! :)

  68. Great shots! You found yourself a fog bow. We see them out on the boat on the Ocean. Mmmmm tomatoes. Not a huge crop this year but the last several years we have huge crops. We made Tomato soup, sauce and stewed tomatoes. I want to get some Roma's and making some Tomato paste.
